Roasted vegetable soup



 Instructions

HOW TO PREPARE ROASTED VEGETABLE CREAM:

  1. For the cream: we clean and dice the peppers, peel the pumpkin and dice it but smaller than the pepper, so that both vegetables finish cooking at the same time.
  2. We put the vegetables on a baking tray, add a little salt, pepper and olive oil. We stir and bake for 30 minutes at 190 º C, crush with the water using a mixer and reserve.
  3. While the vegetables are cooking, we can take advantage of the heat of the oven to prepare the decoration: we mix the drained chickpeas with the paprika, curry and olive oil in a bowl. We bake them alongside the vegetables for 30 minutes as well.
  4. We plate, serve with a few crunchy chickpeas, the pipes and sprinkle a little ground black pepper. Decorate with a little oil, fresh parsley leaves and… enjoy!

TIPS FOR PREPARING A ROASTED VEGETABLE CREAM:

  • The pumpkin, as it takes longer to cook than the pepper, we have to cut it a little smaller so that the two vegetables finish cooking at the same time.
  • The water helps us to crush the vegetables and lighten the cream. You do not have to worry about the flavor, because you will not lose it, when roasting the vegetables the flavor of them is enhanced and we will also include the cooking juice from the oven in the cream.
  • The chickpeas can be prepared both in the oven and in the pan. This time, as we have the vegetables and they are not cooked at that temperature, we prepare them in the pan, but they can be done in both ways, they are delicious.
  • Chickpeas are used both as a topping for any cream, salad or whatever comes to mind, as well as as an aperitif or informal snack.
  • This recipe can be consumed both hot and cold. It all depends on the time of year we meet. And it serves us as an appetizer and first course.

Baked vegetables, water, some spices and salt, we do not need anything else to have a quick dish to prepare and that can serve as a resource to plan the weekly menu. If on top we accompany it, as in this recipe, with some spiced chickpeas and with a crunchy touch when toasted, we have a complete dish for any time. And best of all, we can have more ready in the fridge to save ourselves from those days when we don't have much time. In the baking pumpkin previously it helps to have a silky cream without resorting to potato, cheese or cream to thicken.

In Spain, they are grown mainly in the Canary Islands and Andalusia, as well as in Murcia, Valencia and Catalonia.

On a nutritional level, its contribution in vitamin C and E and vitamins of group B stands out, as well as beta-carotene or antioxidants such as lycopene. It also provides minerals such as phosphorus, magnesium or iron, among others. 

We take advantage of almost everything from the pumpkin, both its interior and its seeds or pipes. In the kitchen, thanks to the meatiness of its interior, it is a resource to achieve a creamier texture, as well as the color and flavor of sauces or creams. It can be boiled, used in stews, or baked. It can also serve as a base for cakes or biscuits, and as it has a sweet flavor, it helps us not need to add sugar. It is one of those ingredients that always improves any preparation, although many people may only associate them with Halloween decoration.
